HI! This week we made one of my most favorite and easy comfort foods. When I had just given birth to my firstborn, my mom came up to help out. She made this for our little family and it’s been one of my favorites ever since. I crave it every time I’m pregnant and I could eat the whole pan.

Here we go!

Ingredients:

  1. 2 chicken breasts

  2. a red, orange, and yellow bell pepper.

  3. corn or flour tortillas

  4. cream

  5. mozzarella cheese or really any cheese you’d like

    What to do:

Place chicken (frozen or thawed, doesn’t matter) in a crock pot. Season how you’d like, and cook on high for 3-4 hours.

When chicken is done, cut up the peppers. You can cut them into strips, chunks, or small like this. My family prefers them cut like this. Sautee them and season them how you’d like over medium heat until soft but still has a crunch, 5-7 min. You can also add onions. My family won’t eat anything with onions in them so I leave them out.

Add your chicken to the peppers and mix. Then add some cream. Not a lot, a splash or two just to moisten the chicken and give it a nice flavor.

Once the chicken, peppers, and cream are mixed, add your cheese. I’ve used colby jack, pepper jack, cheddar, but mozzarella is my favorite for this recipe.
